Basil Dressing
Makes about 1 cup
Ingredients
½ cup olive oil
1 cup packed basil leaves
2 cloves garlic, minced
2 TB shallot, minced (or white onion)
2 TB red wine vinegar
¼ tsp salt
Freshly ground black pepper to taste
Preparation
Place all ingredients into a high-speed blender and blend until smooth. Will keep for about 4 days in the fridge.
