Carrot + Parsley Chickpea Salad
Serves 6-8 side dishes
Ingredients
For the dressing
¼ cup olive oil
4 tbsp fresh lemon juice
1 tsp honey
½ tsp sea salt
1/8 tsp cinnamon
Fresh black pepper
For the salad
3 cups cooked chickpeas
6 dates, seed removed and minced (you can sub raisins but you'll probably want to increase the honey amount int the dressing)
1 bunch carrots, tops removed, grated
1 packed cup flat parsley leaves, minced
½ packed cut carrot tops, minced
Preparation
For the dressing
Whisk all ingredients together. Set aside.
For the salad
Place cooked chickpeas in a large bowl. Add dressing, minced dates, minced parsley and minced carrot tops. Fold in and set aside.
Wash then grate your carrots and fold into the bowl.
Season to taste with sea salt.
