Chard and Bean Salad
Ingredients
For the dressing
3 tbsp olive oil
1 tbsp apple cider vinegar
1 tbsp tropea (sweet) onion, finely minced
1 tbsp maple syrup
¾ tbsp dijon mustard
1 small garlic clove, minced
½ tsp sea salt
¼ tsp paprika
For the salad
3 large leaves of swiss chard, ribs removed and leaves finely chopped
2 cups cooked navy beans
2 cups cooked chickpeas
1 sweet pepper, seeds removed and chopped
A large handful fresh beans cut into bite-sized pieces
Any herbs – I used minced basil and fennel fronds
Preparation
For the dressing
Whisk all ingredients of the dressing together.
For the salad
Finely cut up your swiss chard leaves (stems removed) and place in a large bowl. Add dressing and stir.
Add cooked navy beans and chickpeas.
Remove pith and seeds and chop your sweet pepper then add to bowl.
Cut fresh beans into bite sized pieces and add to bowl. Stir to combine.
Season to taste with sea salt and mix in fresh herbs.
