Charred Snow Peas with a Curried Peanut Sauce

Serves 2-4 as a side dish

 

Ingredients

For the sauce - makes about 2 cups

1 TB toasted sesame oil

1 can coconut milk

½ cup creamy peanut butter

2 TB unseasoned rice vinegar

1 TB tamari

1 TB honey

2 tsp curry powder

1 tsp chilli powder (optional)

½ tsp ground ginger

1 clove garlic

Salt to taste

 

1 TB vegetable oil

1 pound (around 1 pint) snow peas (any pod peas will work but cooking time will vary), trimmed

4 scallions, thinly chopped

Salt and pepper

 

Garnish with: chopped cilantro and roasted peanuts

 

Preparation

For the sauce

Place all ingredients into a blender and blend until smooth. The sauce will keep for about two weeks in the fridge.

 

For the peas

Mix oil with washed peas and spread out on a baking sheet. Set the oven to broil on high and place sheet in the oven for 5 minutes, flipping halfway through. Once finished, remove from oven and stir in green onions and sprinkle with salt and pepper.

You can also char the peas on a BBQ. Coat with oil and either throw the peas directly on the grill or on a piece of aluminium foil on the grill. Cook for about 5 minutes, flipping halfway through. Once finished, remove from oven and stir in green onions and sprinkle with salt and pepper.

 

To serve

Place the charred peas on a large plate and sprinkle with chopped peanuts and cilantro. Either drizzle the peanut sauce over top or serve on the side.
