Green Bean + Celery Stir Fry



Ingredients

For the sauce

3 tbsp tamari

2 tbsp honey

1 tbsp toasted sesame oil

1 tbsp white rice vinegar

1 large garlic clove, peeled

1 small hot pepper (Thai or Cayenne)

½ tsp ground ginger


For the stir fry

1 brick (454g) tofu (firm or extra firm) cut into thick matchsticks

2 tbsp oil – divided

Sea salt

Black pepper

1 bunch celery, leaves and end removed, stalks cut into 2-inch pieces

250g (1/2 bag) green beans, washed and ends removed

A few scallions, roots removed and cut into 2-inch pieces

 


Preparation

For the sauce

Place all ingredients in a high-speed blender and blend until smooth. Set aside.


For the stir fry

Preheat oven to 400 degrees F. Line a baking sheet with parchment paper and place cut tofu on top then drizzle with 1 tbsp oil and sprinkle generously with sea salt and black pepper. Bake for 40-50 minutes, flipping tofu halfway through. Once golden brown, remove from oven and let cool.


Heat the remaining 1 tbsp oil in a large skillet or wok on a high heat.


Add celery and beans and stir. Cook for 5 minutes, stirring frequently.


Add sauce, tofu, and scallions and cook for about another 5 minutes, stirring frequently until most of the sauce is gone. Remove from heat.


To serve

This stir fry is delicious warm or cold.
