Kohlrabi Pasta Salad


Ingredients

For the dressing

½ cup plain yogurt

2 tbsp apple cider vinegar

1 tbsp honey

½ tsp sea salt

¼ tsp onion powder

¼ tsp garlic powder

1/8 tsp celery powder

1/8 tsp cinnamon

A few cracks of fresh black pepper


For the pasta salad

About 150g dried pasta, cooked according to instructions on package (Cook until slightly underdone)

1 bunch gai lan, washed and roughly chopped (you can sub with rapini, broccoli or most other greens)

1 bunch kohlrabi, leaves removed (save for another use), peeled and cut into matchsticks

1 apple cut into pieces

½ bunch parsley, stems removed and finely minced

1/3 cup raisins (optional)



Preparation

For the dressing

Whisk all ingredients in a small bowl. Set aside.


For the pasta salad

Cook the pasta according to instructions. Drain immediately and run under cold water.


Wash and chop the gai lan, kohlrabi, apple and parsley.


In a large bowl, mix the cold pasta, gai lan, kohlrabi, and parsley along with the yogurt dressing. Fold in the raisins.


Let cool in the fridge for an hour then serve.
