Maple Thyme Carrots + Whipped Honey Goat Cheese
Ingredients
For the quinoa
1 cup uncooked white quinoa, cooked according to instructions
1 tbsp olive oil
1 tbsp lemon juice
½ tsp salt
1/8 tsp ground cinnamon
For the carrots
½ bunch carrots, tops removed left whole or sliced, depending on size
2 tsp thyme leaves, chopped
2 tsp olive oil
2 tsp maple syrup
Sprinkle of sea salt and pepper
For the whipped goat cheese
150g plain goat cheese
2 tsp honey
1 tsp lemon juice
Preparation
For the quinoa
Cook quinoa according to instruction. While cooking start preparing your other ingredients. After quinoa has finished cooking, stir in olive oil, lemon juice, salt and cinnamon. Set aside.
For the carrots
While quinoa is cooking set oven to broil on high and place oven rack in the middle. Top carrots and wash – cut if necessary. Line a baking sheet with parchment paper. Lay carrots down flat on parchment and drizzle with 2 tsp olive oil and 2 tsp maple syrup. Sprinkle with thyme leaves, sea salt and pepper. Place in the oven for about 20 minutes or until carrots start to char. Toss once halfway in between time.
For the whipped goat cheese
Place all ingredients in a food processor and blend until very smooth. Set aside.
To serve
You can serve this dish many different ways. I left my carrots whole for the photo, layered a base of whipped goat cheese and then topped with quinoa. You can also chop the carrots and mix with the quinoa and drizzle with goat cheese mixture.
