Summer Potato Salad
Ingredients
For the dressing
¼ cup olive oil
2 small garlic, finely minced
2 tbsp finely minced fresh oregano
2 tbsp red wine vinegar
1 tbsp maple syrup
½ tbsp Dijon mustard
½ tsp sea salt
Fresh pepper
For the salad
1 bag (about 800g) potatoes, washed and cubed
1 large tomato, chopped (or cherry tomatoes, halved)
A few scallions, chopped
A few radishes, thinly sliced
Preparation
For the dressing
Whisk all ingredients together and set aside.
For the salad
Wash and cut potatoes. Bring a large pot of water to boil and cook potatoes until tender but not overcooked. New potatoes cook fast! Drain and run under cold water.
Chop tomato, scallions, and radishes and add to a large bowl along with the cooked potatoes. Pour dressing over and mix then place in the fridge for about 30 minutes.
Serve cool.
