Tarragon Balsamic Beets + Onions

 

Ingredients

½ tbsp olive oil

5 - 8 beets, peeled and quartered

Pinch of sea salt

4 - 6 mini onions, tops removed and quartered (shallots would work well too)

2 garlic cloves, minced

1 ½ tbsp maple syrup

1 tbsp balsamic vinegar

1 tbsp tarragon leaves, minced



Preparation

Preheat oven to 350 degrees F.


Add ½ tbsp olive oil to a oven safe dish along with beets and a pinch of sea salt.


Bake in oven with a heat proof lid for 30 minutes, stirring once.


After 30 minutes add onions pieces, minced garlic, balsamic vinegar, maple syrup, and tarragon leaves. Stir and continue cooking for another 20 minutes, this time with the lid off.


After 20 minutes if you want a bit of char, turn the oven on broil.


Remove from heat and serve as a small side dish or for a larger meal pair with cooked quinoa or pasta.
