Vegan Caesar Dressing
Makes 1.5 cups
Adapted from the RAW Cookbook
Ingredients
¼ cup cashews, soaked for at least 30 minutes and drained
1/3 cup olive oil
1/2 cup water
2 garlic cloves, whole
1 TB dried seaweed (either arame or dulse)
Juice from 1 lemon
1 date, pit removed
1 tsp tamari
¾ tsp celery powder (or 1 fresh stalk)
¼ tsp salt
¼ tsp pepper
Preparation
Place all ingredients in a blender and blend until completely smooth. Will keep in the fridge for about a week.
