Charred Pea Salad + Whipped Lemony Goat Cheese



Ingredients

For the whipped goat cheese

150g goat cheese

Juice from 1 large charred lemon

1 tbsp honey

¼ tsp sea salt


For the salad

1 bunch scallions, roots removed

1 bag of peas, tops removed

½ tbsp olive oil

½ bunch radishes, cut (in half or sliced – whatever you’d like)

Poppy seeds


 

Preparation

For the whipped goat cheese

Place a small dry pan on a high heat. Slice your lemon in half, remove as many seeds as you can, and place each half face down on the pan and let cook until charred. Remove from heat.


Place the goat cheese, honey, and sea salt in a food processor. Scoop out the charred lemon and blend with everything else until completely smooth. Set aside.


For the salad

Place peas and whole scallions in a large bowl and coat with ½ tbsp oil.


Place a large, dry pan on the stove on high heat. Once hot add the oiled peas and scallions and cook for a minute until slightly charred. Remove from heat and let completely cool. Roughly chop scallions.


Remove radish greens (save for later use) and slice raw radishes.


To serve

Spread whipped goat cheese on each individual plate. Top with peas, chopped scallions, and radishes. Sprinkle with poppy seeds and serve.
