Coconut Lime Rice + Bok Choy
Ingredients
1 cup dry ceylon rice
1 can (400ml) full fat coconut milk
125ml water
1 large bok choy, finely chopped, and washed
Juice from 1 ½ limes
¼ tsp sea salt plus a pinch
Preparation
Rinse and drain 1 cup of dry ceylon rice.
In a medium pot add rice, can of coconut milk, 125ml water, and a pinch of sea salt. Bring to a boil then reduce to simmer on low. Place lid on pot and let cook for 20 minutes. Remove from heat, fluff with a fork, and allow to sit (with lid on) for 5 minutes.
Stir in chopped bok choy, lime juice, and ¼ tsp sea salt.
Serve rice along side your favourite meat or meat substitute.
