Indian Spiced Coconut Corn Soup + Greens
Ingredients
2 tbsp coconut oil
1 small onion, minced
2 large garlic cloves, minced
1 can full fat coconut milk
2 cups water
2 tsp sea salt
Fresh ground pepper
1 tsp curry powder
1 tsp turmeric powder
½ tsp ground ginger
¼ tsp cumin powder
2 cobs of corn, husks removed and kernels cut off the cob
1-2 zucchini, chopped into bite sized pieces
1-2 sweet peppers, chopped into bite sized pieces
1 bunch mustard greens, chopped (the soup wilts the greens quite a bit so use half up to the whole bunch of greens)
¼ cup of chives, minced
Preparation
In a large pot heat 2 tbsp coconut oil on low. Add minced onions and sauté for about 10 minutes.
Add minced garlic and sauté for another 5 minutes.
Increase heat to high and add coconut milk, water, sea salt, pepper, curry, turmeric, ginger, and cumin. Once boiling, immediately reduce to a low simmer and add corn pieces, zucchini, and sweet peppers. Simmer on low for about 30 minutes.
After 30 minutes, add chopped green, stir, and turn off heat. Let sit for about 5 minutes.
Season to taste with sea salt and pepper and stir in minced chives.
