Sesame Miso Grilled Veggies
Ingredients
For the sesame miso sauce
2 tbsp light miso
1 tbsp toasted sesame oil
2 tsp lemon juice
2 tsp honey
1/8 tsp sea salt
¼ cup water
For the grilled veggies
1 tbsp oil
1 bunch radishes, tops removed (save for another use) and sliced in half
1 large handful snap peas, ends trimmed
1 bunch garlic scapes
1 bunch scallions
Preparation
Preheat BBQ to 400 degree F. Place a large cast iron skillet directly on your BBQ grill as it heats up.
For the sesame miso sauce
Whisk all ingredients together. Set aside.
For the grilled veggies
Remove the tops from the radishes, slice in half and place in a large bowl.
Cut ends off peas and add to large bowl along with whole scapes and whole scallions.
Drizzle oil over veggies and coat using your hands.
Separate the scallions and scapes out of the bowl.
Place the oiled scallions and scapes directly on your grill for a minute each side, giving them a nice char. Remove from heat, let cool and chop.
Once your cast iron skillet is heated toss in your oiled radishes and peas. Stirring occasionally, cook for about 10 minutes with the BBQ lid down. Once veggies look slightly charred, toss in your chopped scallions and scapes and the miso sauce. Cook down for about another 5 minutes or until the sauce is evaporated and the remainder thick.
Remove from heat and serve. Works well with quinoa for a fuller dish.
