Bok Choy

About Me: Bok choy is a traditional leafy green vegetable from China which grows in elongated, upright heads of dark green leaves with large, white or green stems. All parts of the bok choy (leaves and stem) are deliciously edible. Bok choy can be used in a stir-fry, raw in a salad, slice in half and grilled, or used in a fermented kimchi. This is a cool-season crop, so you’ll only see it in the shoulder seasons of the spring and fall.

To store: Bok choy should be stored in a cotton mesh bag, or paper towel, and then placed inside a container inside your fridge crisper. Store for about a week to two weeks.
