Corn (Sweet)

About me: Corn is a very popular cereal grain, which is part of the grass family. Corn contains magnesium, potassium, vitamin C, and certain B vitamins. Sweet corn is amazing steamed, or thrown on the barbeque, then slathered with butter and salt. It’s also great in soups, salads, tacos.…just about anything.

To store: Put dry corn (with husks on) in a cotton bag, or paper towel, and then place inside a bag, or container inside your fridge crisper. It should keep for about a week to two weeks.

To freeze: Remove husks. Blanch corn for 2-3 minutes. Rinse in cold ice water to stop the cooking, using a knife slice downward and cut off the kernels from the cob, then pack into an airtight container, and freeze.
