Parsnip

About Me: Parsnips aren’t the most loved, but at Catena Farm we really enjoy them when the cool fall season hits. They have a nutty-sweet taste and a tender-hearty texture that is all their own. Parsnips are a root vegetable and due to a very long growing season, parsnips are not available until late fall, and improve in sweetness after exposure to frost. These guys are loaded with vitamin C and dietary fibre. Parsnips are great in stews, roasted, or made into fries with a tasty dip.

To store: Place, unwashed, in a mesh bag, or paper towel, and then place inside a bag, or container inside your fridge crisper. They will keep for several weeks. Parsnips store very well in root cellar conditions as well.
